What is the difference between face mode and polygon?

In polygon mode, you can modify the geometry of the polygon. In Face mode you can alter the visual appearance of the polygon (it's material, UV coordinates, etc).

Face mode :
You can put texture one one face, uv map this face, make rectangulare uv map, slide texture, rescale texture ... all one texture

Polygone mode :
You can inset, extrude, move, rotate, ... action for structure of the object.
