When I create a primative, a box appears for me to enter the dimensions that I want. What are these Units? (eg meteres, feet inches etc)
Is there somewhere that I can set which units I prefair to use?

The units are generic length units. You chose your own scale here, it can be 100 units = 1m or whatever fits your purpose. There's no advantage or disadvantage however you chose it to be.

You can also use the keys 1-6 to change the grid. There are major grid lines which are (mostly) the bigger grids. The major Grid lines can be also configured in the Options (View -> Options):
