What I did.

Made a cylendar
Edge mode-->selected one ends vertices
Extruded 6-8 times in small increments
then, vertex mode-->moved vertices into place.

Object looks great in all 3 views, but renders flat in the 3d screen?
How can I retain the roundness while extruding and moving vertices?

(to select edges, I drew a box to highlight)
(to select vertices, I drew a box to highlight)

These are 2 tools that I've never used in DeleD, so am probably not using them correctly.

Hmm, I don't quite understand what you're trying to do. Can you post a picture?

Sure
If you look at the tentacles, they appear flat. (even tho they appear round in wireframe view.)

Perhaps you scaled the cylinder and you had an axis restriction (the X/Y/Z buttons) activated, so you only scaled in one dimension?

Nope. I've never used those buttons before. I'm going to attempt to remake it, and hopefully it will come out better.
